I know I've said it before ... but I mean it. My wife is trying to kill me. Call someone ... send me help. If I disappear, it was no accident. I am not being ridiculous! I have come upon a conspiracy theory of the greatest of evils. She's out to get me. How? I'll tell you!
Yesterday started with my second attempt to make whole wheat pancakes ... and it turned out much better. I am going to go to Whole Foods and get the almond and brown rice flours that some of you have recommended. I tried to find some at Walmart but no luck. I will not yet provide the recipe because it is not perfect. I will try again ... but it was MUCH better. Additionally, we have this cane syrup that is made at a mill where Yuci is from. They make it all right in front of you. No additives, no preservatives. Heated, it is quite delicious.
Lunch caught me trying to balance the strings that hold our world together. Yuci went to a women's meeting so I played "dad." I served my kids some sandwiches but myself ate veggies ... just veggies. My body is changing. A few months ago, it was unable to process the fibers ... seriously, a medical condition I have been dealing with that is quite painful and frustrating. I have been unable for years to enjoy a plum or an apple. Raw fruits and veggies have had to be juiced ... no other options. Now, along with my new found ability to actually taste the differences in things I have also the ability to eat them. Maybe my body just needed to get all of the junk out my trunk so it could properly digest the cellulose in the fruits ... I don't know. All I know is that I can eat stuff that just a month ago would sometimes even hospitalize me. Figure that one out.
A little later, I ate some tuna. I was hallucinating by that time. I do not kid nor exaggerate when I say that food just doesn't stay with me. However, the results are amazing. I will buy a scale next trip to walmart but my belt is telling the story.
So how is Yuci trying to kill me? Well, when I brought the kids from sports camp Yuci was going to have dinner made for when they got home (b/c they had to run right out to VBS (Vacation Bible School) at a local church). What did she make? Well I told you in the previous post: shrimp stew. But see, she's Cajun and makes her roux from scratch ... and it causes the whole house to be saturated with this aroma of greatness. I could smell the sweet heaven from our unattached garage. Shrimp stew and smothered cabbage. Oh ... and none of it I could eat. I watched the kids eat furiously at their bounty while, with patience and discipline, I simply licked the table ... they seemed not to notice.
However, she in all of her evil schemes found a loop hole for me. My meat restrictions are simply red meats ... seafood and poultry are on the list. So she made me a pot of brown rice (seasoned to perfection) and my own smothered cabbage (no sausage used) and I marinated some shrimp and ...
She keeps the dark greens of the cabbage to give more depth to the taste. It was SOOO GOOOOD!
That's a small dixie plate if your curious about my potion size ... and my son sat there beside me and ate half of it. The woman can cook! So why do I verbally debase her? I don't! So stop trying to be divisive!
